Chili the light way. Don't be scared, try it, you'll love it! Ingredients:
1 tablespoon olive oil |
1 large onion, chopped |
4 garlic cloves, chopped |
2 tablespoons chili powder |
2 teaspoons cumin |
1/2 teaspoon ground oregano |
4 serrano peppers, seeded and diced |
14 1/2 ounces chicken broth |
28 ounces crushed tomatoes |
14 1/2 ounces tomato sauce |
1 teaspoon liquid smoke |
1/2 teaspoon lime juice |
1 lb ground turkey or 1 lb chicken |
14 1/2 ounces kidney beans, drained |
14 1/2 ounces black beans, drained |
1 (15 ounce) can whole corn |
Directions:
1. In large pot, heat oil and saute onions and peppers until onions start turning translucent. Add garlic for 2 minutes, Add chicken broth, tomato sauces, liquid smoke, lime juice, chili powder, cumin and oregano. Stir together and heat to slow boil, bring down to a simmer. Cook for 1 hour. 2. Brown meat and add to chili base. Add drained beans and corn. Cook for 1 more hour. 3. Serve with corn bread. De-lisch. |
