Chili Spiced Bean and Veggie Wraps

A few modifications of Jyl Steinback’s recipe in her Superfoods cookbook.
Ingredients:
3 tablespoons extra virgin olive oil
2 cups broccoli florets, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small yellow onion, chopped
2 large garlic cloves, minced
1 tablespoon chili powder
1/2 teaspoon garlic powder
1 (15 ounce) can black beans, rinsed and drained
1/2 cup low-fat sour cream
1/2 cup cheddar cheese, shredded
2 large flour tortillas
Directions:
1. Heat olive oil.
2. Saute broccoli and pepper slices for a little while.
3. Add the yellow onion and sauté for a while.
4. Add the minced garlic and sauté a little more.
5. Add chili powder and garlic powder and stir. (Might want to add more seasoning such as salt and pepper to better suit your taste.).
6. Add black beans and stir.
7. Remove from heat.
8. Add sour cream and stir.
9. Add cheddar cheese and stir.
10. Wrap final mixture into tortillas.
11. enjoy.
