This is a tried and true busy night meal. Everybody loves this one and it goes a long way. It's full of wonderful spicy flavors. I make this often and it never gets old. Enjoy Ingredients:
1 pound pork burger or hamburger |
10 ouce can hot enchilada sauce |
15 ounce can drained pinto beans |
8 ounce can tomato sauce |
1 cup sour cream |
1 tablespoon instant onion |
1 cup shredded pepper jack cheese |
6 ounce package corn chips |
1/2 cup shredded cheddar cheese |
Directions:
1. Brown meat then drawn off fat. 2. Stir in beans, enchilada sauce, tomato sauce, jack cheese and onion. 3. Set aside 1 cup chips and stir coarsely crushed remaining chips into meat mixture the put into a 2 quart casserole dish and bake covered at 375 for 30 minutes. 4. Spoon sour cream on top in center then sprinkle 1/2 cup cheese and 1 cup chips around edge. 5. Bake uncovered for 3 minutes. |
