My favorite way to cook shrimp. Ingredients:
3 tbs olive oil |
2 shallots chopped |
2 chopped garlic cloves |
1 chopped fresh red chili |
1 pound seasoned riped tomatoes, peeled, seeded and chopped.(canned can work well here also, but i found i need to add a little sugar to them to cut the acidity, and tartness) |
1 tbs tomato paste |
1 bay leaf |
1 fresh thyme sprig |
6 tbs dry white wine |
4 cups peeled and cooked large shrimp |
salt and pepper |
coarsely torn basil leaves for garnish |
Directions:
1. Heat oil in sauce pan and fry shallots garlic and chili until garlic starts to brown. 2. add tomatoes, tomato paste, bay leaf, thyme, wine and seasoning. 3. Bring to boil. Reduce heat and cook for 10 minutes, stirring occasionally until sauce has thickened. Remove the herbs. 4. Stir shrimp into sauce and heat through for a few minutes. 5. Taste and adjust seasoning 6. Scatter basil leaves over top and serve immediately. |
