Chili - Sara's Veggie Chili (Non-Vegan) |

Great veggie chili that even my non-veg friends love. To make vegan use soy cheese. Ingredients:
1 tbsp vegetable oil |
1 medium onion, diced |
2 tbsp garlic, chopped |
300 g mushrooms, sliced |
3 large green peppers, diced |
4 jalapeƱo peppers, sliced |
6 small potatoes, diced |
340 g yves veggie ground round original |
28 ounces red kidney beans , canned |
56 ounces whole tomatoes, canned |
4 ounces cheddar cheese, grated |
1 tbsp salt |
1 tbsp pepper |
1 tbsp chili powder |
Directions:
1. Chop & boil potatoes 2. Heat oil in pot - medium high 3. Add items to the pot as they are ready 4. Dice onions 5. Add Garlic 6. Slice Mushrooms 7. Add half salt 8. Chop Peppers 9. Add Veggie Ground Round 10. Add half pepper 11. Add half chili powder 12. Simmer until potatoes are ready 13. Add potatoes 14. Reduce Heat to low simmer 15. Add Kidney Beans 16. Add Tomatoes 17. Simmer for at least 1 hour until ready. 18. Top with Cheese. |
