Ingredients:
2 piece(s) salmon fillets skinless
1 teaspoon(s) chili powder
3 tablespoon(s) limes squeezed
2 clove(s) fresh garlic smashed
1/4 whole(s) red onions thinly sliced
2 tablespoon(s) cilantro chopped
1 teaspoon(s) ground cumin
1 1/2 teaspoon(s) olive oil
salt
cooking spray
ground black pepper
1/3 cup(s) sour cream
1/2 piece(s) red pepper thinly sliced
1/2 piece(s) pablano pepper thinly sliced
1 cup(s) frozen corn thawed
Directions:
1. Preheat oven to 425 degree. Mist 2 baking sheet with cooking spray.
2. Mix 1 T lime juice with garlic, chili powder, cumin with 1/2 t olive oil.
3. Coat salmon with mix. Let sit.
4. Toss corn, peppers and onion with 1 t olive oil.
5. Spread veg mix onto 1 baking sheet in single layer.
6. Place salmon on 2nd baking sheet.
7. Drizzle remaining salmon marinade onto veg.
8. Season salmon and veg with salt and pepper.
9. Roast 10 mins till till cooked and veg tender.
10. Mix sour cream, cilantro and 2 T lime juice. Add salt to taste.
