Chili Roasted Peanuts With Dried Cherries |

I love this recipe for the holiday. It's a bit different than a lot of spiced nuts-just because it's also got the sweetness of the cherries to balance it out. Ingredients:
1 ounce butter |
1 lb raw peanuts |
1 tablespoon mild chili powder |
2 teaspoons ground cumin |
2 teaspoons white pepper |
1 tablespoon salt |
1/2 teaspoon dried oregano |
1/2 teaspoon cayenne pepper |
1/2 lb dried cherries or 1/2 lb raisins |
Directions:
1. Melt the butter in a small sauce pan. 2. Coat the raw peanuts with the melted butter. 3. Mix together all remaining ingredients (except cherries). 4. Toast the peanuts in a 300-325°F oven for about 10 minutes shaking the pan occasionally. 5. Transfer the peanuts to a large bowl and toss to coat with the mixed dry ingredients. 6. Mix in cherries until uniformly blended. 7. Cover and store at room temperature. |
