These roasted carrots are bursting with zesty flavor Serve with simple roast chicken or pork. Eating Well Ingredients:
2 tb canolia oil |
1 tsp chili powder |
1 tsp ground cumin |
1/2 tsp salt |
2 lbs carrots (10-12 medium),cut into 1/4' diagonal slices |
2 tb fresh cilantro |
2 tb lime juice |
Directions:
1. Position rack in lower third of oven;preheat to 450. 2. Combine oil,chili powder,cumin and salt in med. bowl. Add carrots and toss well to coat. 3. Spread out on rimmed baking sheet. Roast the carrots,stirring once,until tender and golden,20 to 25 mins. 4. Toss carrots with cilantro and lime juice. Serve immediately. |
