Really quick and easy recipe passed down to me by my Mom. It's a crowd pleaser. Looks impressive in cooked bell peppers too. Ingredients:
3/4 lb ground chuck |
1/3 cup chopped onion |
1 tablespoon chili powder |
1/2 teaspoon dried mustard |
1 (10 ounce) can whole kernel corn (drained) |
1 cup green pepper |
1 (15 ounce) can tomato sauce |
1 (15 ounce) can diced tomatoes |
1/3 cup water |
1 cup minute rice |
1 (12 ounce) package shredded cheddar cheese |
Directions:
1. Brown ground beef, onion and pepper. Drain. 2. Add spices and all other ingredients except rice. 3. Bring to a full boil then stir iin rice. 4. Reduce heat cover and simmer for 5 minutes. 5. Mix and serve sprinkled with shredded cheese. 6. You can also serve in cooked whole bell peppers and sprinkle with cheese which looks really impressive, but is super easy! |
