Spicy rice Ingredients:
chili rice |
makes about 4 |
2 cups of already cooked white rice |
4 oz. can of well drained chopped green chillies or jalapenos |
2 eggs |
2 cups of grated cheese (monterrey jack) |
1 cup of milk |
i would like to try this with red peppers and some parsley with swiss cheese. |
Directions:
1. Preheat oven at 350°F. Beat the eggs in a large bowl. Stir in the cooked rice, 1 cup of the cheese, milk and chillies. Pour the mixture into a greased oven bowl (preferably a glass casserole). Lay the remaining cheese on top of the mixture and cook in oven for about one hour. |
