Light and fluffy-an excellent side to any Mexican menu. Ingredients:
3 eggs |
1 tablespoon water |
3 tablespoons flour |
12 ounces canned whole green chilies |
10 ounces cheddar cheese |
Directions:
1. Separate the eggs, beat the whites until stiff then fold in the yolks, water and flour. 2. Remove seeds and clean chilies, then stuff with cheese. 3. Spoon a portion of the egg mixture (large enough to support a chili) onto a heated frying pan then place a chili on top of the mixture. Then add another portion of egg mixture on top of the chili. 4. Brown one side then the other. |
