Awesome main dish with a side of spanish rice and beans. Ingredients:
1 c - half and half |
2 - eggs |
1/3 c - flour |
1 - 12oz can whole green chilies |
8oz grated jack cheese |
8oz grated mild cheddar cheese |
1 - 8oz can tomato sauce |
Directions:
1. Preheat oven to 375 degrees 2. Beat half and half, flour and eggs until smooth. 3. Split chilies lengthwise and rinse, removing seeds. 4. Dry chilies on a paper towel. 5. Mix grated cheeses together in a bowl, set aside 1/2 cup for topping. 6. Layer chilies, cheese and cream sauce in an 8x8 dish, layer until all ingredients are gone. 7. Pour 8oz can of tomato sauce over the final layer. 8. Bake for 35 minutes 9. Remove from oven and sprinkle reserved cheese on top. 10. Bake for an additional 10-15 minutes 11. Insert a knife in the center of casserole. If the egg mixture is not thoroughly cooked, cook for an additional 15 minutes. |
