This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kilgore Estate in Sachse, Texas in 1988. Ingredients:
8 ounces canned diced green chilies drained |
8 ounces shredded sharp cheddar cheese |
2 cups milk |
1 cup all purpose baking mix |
1 cup frozen egg substitute thawed |
4 slightly beaten eggs |
1 cup cottage cheese |
salsa |
Directions:
1. Spray a rectangular baking dish with non-stick cooking spray. 2. Sprinkle with chili peppers and cheddar cheese. 3. In medium bowl combine milk, baking mix and eggs then beat until smooth. 4. Stir in cottage cheese then spoon eggs on top. 5. Bake at 350 for 45 minutes. 6. Let stand 10 minutes before serving. 7. Top with salsa. |
