using 2.5 cups Morningstar Protein Crumbles (not tofu) also using canned and rinsed chili beans (not shell beans) everything else is the same :) Ingredients:
1 cup beans, shell, canned |
14 oz diced tomatoes |
2 1/2 c firm tofu |
1 carrot |
1/2 onion |
1 red bell pepper |
8 cloves garlic |
1 t olive oil |
4 t chili powder |
2 t fresh oregano |
1 t cumin |
1/2 c vegetable broth |
Directions:
1. dice the onions, garlic, carrot, and pepper, sautee in olive oil 2. add spices, stir until it starts to smell good 3. add tomatoes and beans, stir 4. add about 1/2 of the broth 5. add crumbles 6. add more broth 7. bring to a boil, then cover and turn down heat 8. simmer till thick |
