Chili Peanut Pork Chops With Carrot Cucumber Salad |

Yummy peanut and chili crusted prk chops with a cooling salad. Ingredients:
1 c dry-roasred peanuts |
2 tsp chili powder |
4 1/2 thick pork chops |
2 tb olive oil |
1/4 c vinegar |
1 tb sugar |
3 small carrots |
1 small english (seedless) cucumber |
1/2 c fresh cilanto leaves |
Directions:
1. In food processor or by hand chop 3/4 c of the peanuts. 2. In shallow dish,combine chopped nuts and chili powder. Press pork chops into mixture to coat. 3. In 12 skillet,cook pork in hot olive oil over med heat for 5 mins on each side. 4. Meanwhile,in medium bowl,combine vinegarand sugar;stir till sugar is dissolved. With vegetable peeler,lenthwise cut cucumber and carrot into ribbons.. Add to bowk,stir in remaining peanuts and cilantro leaves. 5. Serve pork chops with carrot and cucumber mixture. Sprinkle all with additional chili powder. |
