Chili Peanut Pork Chops With Carrot Cucumber Salad |

This recipe uses thin sliced pork chops, with a peanut-chili coating, that is served with an easy to make salad. Ingredients:
1 cup dry roasted peanuts |
2 teaspoons chili powder |
4 pork chops, 1/2 inch thick |
2 tablespoons olive oil |
1/4 cup vinegar |
1 tablespoon sugar |
3 small carrots |
1 english cucumber |
1/2 cup fresh cilantro, chopped |
Directions:
1. Chop peanuts in a food processor, or by hand. 2. Combine 3/4 of the chopped nuts with chili powder and press into pork chops, on both sides. 3. In a large skillet, heat oil over medium heat, cook chops about 5 minutes per side (internal temp 155 degrees F). 4. Meanwhile, in a medium bowl, combine vinegar and sugar until sugar is dissolved. 5. Cut carrots and cucumbers into ribbons with a vegetable peeler; stir into vinegar mixture. 6. Stir in reserved peanuts and cilantro. 7. Garnish with additional chili powder. |
