Flavorful potatoes, with just the right kick ! Ingredients:
1 and 1/3 pounds (4 medium boiling potatoes) peeled and cut in chunks |
1/2 cup sour cream |
1/4 to 1/3 cup milk |
1/3 cup green onion or chives, minced |
2 tsp. chili powder |
salt and pepper, to taste |
1/2 to 1 cup, cheddar cheese (or) cheese of choice, grated |
3 tbsp cilantro, chopped (optional) |
Directions:
1. In medium saucepan cook potatoes in 2 to 3 inches of boiling water, 2. covered, about 12 minutes, until tender; drain thoroughly 3. Mash potatoes with potato masher or electric mixer. 4. Add sour cream, green onions, milk and chili powder 5. Mix in salt and pepper. (DO NOT overbeat) ! 6. Stir gently over low heat just till heated through. 7. Serve topped with cheese, allow to melt on top, and cilantro |
