This recipe was originally given to be used with Southwest Scramble. This version has been reworked for the Make It Healthier 2008 forum. It is a topping for Southwestern Scramble on the Lite Side Southwestern Scramble on the Lite Side Delectable! Merry and bright. Ingredients:
2 large tomatoes |
1 medium onion |
1/2 cup cilantro |
1/2 large lime |
1/2 teaspoon salt |
1 large jalapeno (deseeded to taste) |
Directions:
1. Chop tomatoes, jalapeno, onions and cilantro by hand, into small pieces. 2. Mix together in a bowl. 3. Add salt and lime juice. 4. Mix thoroughly and chill in the refrigerator for about an hour. 5. Remix before serving. |
