Potato wedges with a bite! These can be made with or without the cheese. Ingredients:
8 yukon gold potatoes, wedged |
1 lime, zest and juice |
1/4 cup olive oil |
1/2t each of garlic, onion, chili and/or cayenne pepper |
salt |
1/4 cup fresh cilantro, chopped and divided |
1/2 cup shredded mexican or monterey jack cheese |
8oz sour cream |
8oz salsa |
Directions:
1. Combine lime zest, juice, oil and spices in large zipper top bag. 2. Add potato wedges and toss to coat. 3. Bake on well greased baking sheet for 25 minutes, at 425. 4. Sprinkle with cheese and bake until cheese melts. 5. Top with half of the cilantro just out of oven. 6. **combine salsa, sour cream and remaining cilantro for a dip, if desired** |
