A recipe inspired by Chili Lime Grilled Corn on the Cob, an excellent pairing. Nothing like the flavor of lime to celebrate summer. Ingredients:
2 chicken breasts, boneless, skinless |
2 tablespoons olive oil |
2 garlic cloves, minced |
1 teaspoon chili powder |
1 tablespoon lime juice |
1 tablespoon tequila |
salt and pepper |
Directions:
1. Combine marinade ingredients. 2. Trim chicken and toss to coat in marinade. Let stand at least 20 minutes. 3. Place on preheated, greased grill. 4. Cook, turning occasionally, until no longer pink but still tender. |
