CHILI FRIED SHRIMP WITH SCALLIONS AND ORANGE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cannon Estate in Addison, Texas in 1990. Ingredients:
1 orange |
2 tablespoons peanut oil |
4 small dried chilies |
2 pounds shrimp peeled |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
12 scallions cut into 2” lengths |
Directions:
1. With vegetable peeler or paring knife remove zest from orange avoiding the white pith. 2. Cut zest into 1” lengths then cut orange in half and juice it then set juice aside. 3. Place large skillet over medium high heat and add oil after a minute add chilies and zest. 4. After chilies start to smoke turn heat to high and add shrimp. 5. Cook without stirring 2 minutes then stir shrimp and season with salt and pepper. 6. Add scallions and cook stirring occasionally until they just begin to soften about 2 minutes. 7. Stir in orange juice and cook 30 seconds then taste and adjust seasoning if necessary. 8. Serve immediately. |
