Chili-Esque Soup Base

Flavored differently every time, spice it to taste.
Ingredients:
1 lb lean ground beef
1 med onion, diced
1 tbspn light olive oil
24 oz (1 lg can) diced tomatoes, no salt added
1/4 lb dry red beans
1/4 lb dry white beans
15 1/4 oz (1 can) whole kernel no-salt corn
1/4 tsp salt
4 c water (approximately)
Directions:
1. Prepare the beans ahead by soaking according to package directions until they are edible. Do not salt during soaking preparation, as this will cause them to not absorb enough water.
2. Saute the onion in the olive oil at the bottom of a soup pot over high heat, until translucent
3. Add ground beef and agitate until brown
4. Add remaining ingredients, including water to taste.
5. Flavor to taste using herbs and spices as desired. Divide into 1.5c servings. Freezes well.
