Chili Crumb-Stuffed Onions |

This is a great slightly spicy dish for a Tex-Mex feast! Ingredients:
4 large onions (i use vidalia) |
3/4 cup italian breadcrumbs |
1/2 cup celery, chopped |
1/4 cup yellow cornmeal |
1/4 cup butter, melted |
2 teaspoons chili powder |
1 teaspoon cumin |
2 teaspoons fresh oregano, chopped |
1/2 cup chicken broth |
Directions:
1. Preheat oven to 400 degrees. 2. Core the onion. 3. Mix the chopped onion cores with bread crumbs, celery, cornmeal, butter, chili powder and oregano. 4. Fill each onion with filling and place in baking dish. 5. Add water to dish and cover with foil. 6. Bake until onions are tender-about 35-40 minutes. |
