Chili -Corn Crusted Flounder or Tilapia |

Ingredients:
4 6 oz fish fillets |
1/2 cup(s) cornmeal |
1 cup(s) salsa |
2 teaspoon(s) chili powder |
1 teaspoon(s) ground cumin |
1/4 teaspoon(s) salt |
1/4 teaspoon(s) black pepper |
milk |
vegetable oil |
fresh cilantro chopped |
3/4 cup(s) ripe tomatoes diced |
2 fresh corn |
shallots chopped |
1/2 teaspoon(s) juice of 1/2 lime |
old bay seasoning |
Directions:
1. Rinse fish, pat dry. On waxed paper, combine cornmeal, 2 tsp chili powder, 1 rsp cumin, and 1/4 tsp each salt , pepper. Dip fish in milk, then into cornmeal. 2. Heat 2 T. oil in large skillet over med-hi heat. Add the fish, cook 3-5 min, turning once until fish flakes easiy. Serve over salsa and sprinkled with cilantro. 3. Salsa: 4.
