Chili Con Carne With Veggies |

Quick and easy. Great for the kids. Ingredients:
1 tablespoon oil |
1 medium bell pepper, chopped |
1 garlic clove, minced |
1/2-1 lb ground beef |
1 -2 1/2 tablespoon chili powder (to taste) |
1 teaspoon cumin |
1/2 teaspoon ground cinnamon |
1 (16 ounce) can red beans, rinsed and drained |
1 (14 ounce) can italian-style tomatoes, crushed, undrained |
1 teaspoon salt |
1 large zucchini, diced |
corn chips (optional) |
sour cream (optional) |
grated cheese (optional) |
Directions:
1. Heat oil. 2. Add onion and cook until soft. 3. Add bell pepper and garlic. 4. Cook 2 minute. 5. Add ground beef, chili powder, cumin and cinnamon. 6. Cook until brown. 7. Add beans and tomatoes with juice. 8. Cook 15 minutes. 9. Add zucchini and cook until tender. 10. Serve with whatever optional ingredients you like. |
