I was just fooling around with quarter kilo of ground pork and, voila, a dish good with rice, bread or baked potatoes. Inspired by a real Chili Con Carne. Ingredients:
250 g ground pork |
1 medium potato, diced |
1 medium carrot, diced |
1 medium bell pepper (i prefer green to add color), diced |
2 tablespoon cooking oil |
3 cloves garlic, minced |
1 small onion, diced |
1 400g can of stewed tomato (i used one with celery and bell pepper flavoring) |
2 tablespoons tomato ketchup |
chili sauce (depends on how hot you want it to be) |
3 tablespoons baked beans in tomato sauce |
salt and pepper to taste |
Directions:
1. Saute garlic and onion in one tbsp oil for about 30 seconds 2. Add in the ground meat and season with salt and pepper. Stir until meat is cooked. 3. Transfer the meat onto a different container. 4. Saute the potato and carrots in one tbsp oil until nearly cooked. (I use non-stick pans to make this work) 5. Return the meat and stir until well blended. 6. Add in the stewed tomato and bell pepper. Simmer until the tomatoes have nearly disintegrated (about 1 hour) 7. Reduce liquid to about half 8. Add the ketchup and chili and mix well. 9. Add the baked beans then serve hot. |
