This a great salad for summer... A different twist on it with the chili.. Ingredients:
2 cups diced chicken |
2 tablespoons lemon juice |
1/2 teaspoon salt |
1/2 pint cherry tomatoes, cut in half |
1/4 cup chopped red onions |
shredded lettuce |
1 clove garlic, minced |
1 1/2 teaspoon chili powder |
1 large ripe avocado, peeled, pitted, cut into pieces |
1/2 cup sour cream |
Directions:
1. In a large bowl, combine all ingredients except lettuce; toos gently. 2. serve over lettuce. 3. Regrigerate leftovers. 4. You may omit the avocado if desired. |
