Adapted from a cookbook called Survival For the Fittest. Ingredients:
1 tablespoon olive oil |
1 red onion, finely diced |
500 g ground chicken |
2 teaspoons minced garlic |
2 teaspoons minced ginger |
1 red capsicum, finely chopped |
1 tablespoon fish sauce |
2 tablespoons sweet chili sauce |
salt and pepper |
2 tablespoons chopped coriander |
Directions:
1. Heat oil in frypan. 2. Add onion - cook 3 minutes till soft. 3. Add chicken and garlic and ginger. 4. Cook 7 minutes till browned. 5. Break up lumps of mince with wooden spoon whilst cooking. 6. Add capsicum and cook further 5 minutes. 7. Add fish sauce and sweet chili sauce and season to taste. 8. Stir in coriander. 9. Serve with noodles or rice or toss through salad leaves. |
