Awesome zesty cornbread to serve with soup or a nice big bowl of Texas Chili! Ingredients:
1 cup flour |
1 cup yellow cornmeal |
1 cup cheddar cheese, shredded |
1 cup frozen corn, thawed and drained |
1/4 cup shortening |
1 cup milk |
1 tablespoon sugar |
4 teaspoons baking powder |
1/2 teaspoon salt |
1 can (4 oz) chopped green chilies, drained |
1 egg |
Directions:
1. Heat oven to 425 degrees. 2. Grease a 9x9 inch square pan. 3. Mix all ingredients until moistened, mixing well. Beat vigorously 30 seconds, then pour into pan. 4. Bake 20 to 25 minutes til golden brown. |
