This is an easy, easy, easy side dish! And, it tastes great! I have made this many times on houseboat trips. Ingredients:
4 cups fresh corn, thawed if frozen |
1 cup extra-sharp cheddar cheese, grated |
1 (8 ounce) package cream cheese, softened |
1 (7 ounce) can diced green chilies |
2 teaspoons chili powder |
2 teaspoons ground cumin |
Directions:
1. Preheat oven to 350^F. 2. Butter 1 1/2 quart baking dish. 3. Mix all ingredients in a large bowl. 4. Transfer to baking dish. 5. Bake 30 minutes until bubbly. |
