Another recipe from the country casseroles cookbook. this one sounds good, but have not tried yet. Ingredients:
3 cups cooked rice |
2 garlic cloves, minced |
1 (4 ounce) can chopped green chilies |
1 (15 1/2 ounce) can red kidney beans, rinsed and drained |
1 medium onion, chopped |
2 teaspoons ground cumin |
1 teaspoon dried oregano |
1 teaspoon creole seasoning |
2 teaspoons chili powder |
1/2 teaspoon salt |
2 cups shredded cheddar cheese, divided |
Directions:
1. IN A 2 QUART BAKING DISH, COMBINE ALL INGREDIENTS, EXCEPT CHEESE. 2. TOP WITH 1 1/2 CUPS OF CHEESE. 3. BAKE, COVERED AT 350 DEGREES FOR 25 MINUTES. 4. TOP WITH REMAINING CHEESE. 5. THEN BAKE, UNCOVERED, FOR 10 MINUTES, MORE. |
