This is from TOH. I haven't made this yet. But will very soon. Let know how you liked it. Ingredients:
1 1/3 cups uncooked penne pasta |
4 teaspoons butter |
1 cup milk |
2 cups cheddar cheese, shredded |
4 teaspoons taco seasoning |
1/4 teaspoon salt |
2/3 cup frozen corn, thawed |
2/3 cup tomato, chopped |
1 (4 ounce) can chopped green chilies, drained |
Directions:
1. Cook pasta according to package directions. 2. Meanwhile, in a large saucepan, melt butter over medium heat. 3. Stir in flour until smooth; gradually add milk. 4. Bring to a boil; cook and stir for 2 minute or until thickened. 5. Reduce heat to medium. 6. Stir in the cheese, taco seasoning and salt. 7. Cook and stir for 2-3 minute or until cheese is melted. 8. Drain pasta; stir into cheese sauce. 9. Cook and stir for 3 minutes or until heated through. 10. Stir in corn, tomatoes and chilies just until combined. |
