This is something that one of my mother's friends served us once. Lately there has been a 'Homebakes' version available in the store. But why buy a boxed meal when it is this easy? And of course you can use any chili that you like. Ingredients:
1 lb chili (i recomend homemade) |
1 (9 ounce) package jiffy cornbread mix |
2 cups rice |
4 cups water |
Directions:
1. Preheat oven to 350°F. 2. Prepare rice in water. 3. While rice is cooking, pour chili into an 8 x 8-inch baking dish. 4. Prepare cornbread as per box instructions. 5. Pour mix over chili. 6. Bake until cornbread is browned and a toothpick comes out clean from the middle. 7. Serve over rice. |
