If you like Chili but don't have the time to make chili, try this as a substitute. Terrific on a fresh roll. This came from Cooking With Carol A Taste Of The Past. I have not tried this, just posting for safe keeping. Ingredients:
1/2 cup bacon, diced |
1/4 cup onion, chopped |
1/4 cup celery, chopped |
1/3 teaspoon salt |
1/4 teaspoon paprika |
1/4 teaspoon nutmeg |
1 teaspoon chili powder |
1/2 lb ground beef |
15 ounces red kidney beans (1 can) |
30 ounces tomatoes (large can) |
Directions:
1. Cook bacon in a skillet until brown and crisp. Add onions and celery. Let simmer about 5 minutes. 2. Combine seasonings with ground meat and add to vegetables. Cook until slightly brown. Add beans and tomatoes. Simmer for about 30 minutes, stirring occasionally. 3. Serve hot on hard rolls. |
