Chili-braised Fish w/ Tomatoes & Potatoes |

Ingredients:
1 pound(s) new potatoes cut into 1/2 inch pieces |
1/2 onion |
2 poblano or anaheim peppers |
1 cup(s) chicken broth |
1 pint(s) grape tomatoes |
salt, pepper, oregano, cumin to taste |
2 6 oz filets halibut |
Directions:
1. Heat oil and add potatoes, onion, 1/2 of the poblano and salt. Cook, covered, stirring often for 12-14 minutes. Add broth, tomatoes, spices, and remaining poblano. Cook for 1 minute, deglazing the pan. Season the cod w/ salt and pepper and place on top of vegetables. Cover and simmer 8-12 minutes until potatoes are tender an fish is opaque throughout. |
