An awesome delicious recipe to serve at a tailgate party or the Super Bowl. originally I found this on the internet, but have made some adjustments over the course of time. LOL It's a work in progress. Ingredients:
3 tablespoons olive oil |
3 lbs beef brisket cut into 1/4 inch cubes |
1 large onion chopped |
1 cubanelle pepper chopped |
1 jalapeno, chopped or if you're really brave 1 habanero chopped |
6 garlic chopped |
1/2 lb ground pork |
1 tablespoon cumin |
5 tablespoons chili powder |
1/4 teaspoon oregano |
1 teaspoon dry mustard |
1 small can plain tomato sauce |
1 cup canned whole tomatoes |
1 small can chopped mild green chilis |
1 small can chopped hot green chilis |
1 chopped chipolte |
2 teaspoons brown sugar |
2 tb adobo sauce from a can of chipoltes |
1 can beer |
1/4 cup bourbon |
1/4 cup tequila |
Directions:
1. In a large frying pan, saute the beef in olive oil until brown. Transfer beef to a large pot. 2. Saute onion, cubanelle pepper, jalapeno and garlic till soft. Place in pot with beef. 3. Saute ground pork until thoroughly cooked, drain and add to the pot. 4. Add all other ingredients. Bring to a boil, then turn heat down and simmer on VERY LOW for 3-4 hours. 5. Serve as is with saltines or over rice, top with fresh chopped onions, grated cheese, and/or sour cream |
