Ingredients:
1 lb dry red kidney beans |
1 medium onion, chopped |
2 -4 garlic cloves, finely chopped |
1/4 lb bacon, chopped |
1 tablespoon chili powder, to taste |
salt & freshly ground black pepper |
1 cup red wine or 1 cup chicken broth |
3 cups chicken broth |
1 (16 ounce) can chopped tomatoes |
Directions:
1. Soak the beans in water overnight. 2. Drain and combine with the remaining ingredients in a large pot. 3. Bring to a boil and reduce the heat to low. 4. Simmer covered for 4 hours, or until the beans are tender and the sauce has thickened, adding more chicken broth if necessary. |
