An over-sized beanburger that is simply sliced into quarters to serve. Serve with: Soured cream, lime quarters, fresh cilantro - and extra sliced chili if you like it hot! Ingredients:
2 tablespoons olive oil |
3 ounces brown breadcrumbs |
6 scallions, finely chopped |
1 tablespoon oil |
1 orange bell pepper, chopped |
1 green chili pepper, finely chopped |
1 teaspoon ground turmeric (optional) |
1 garlic clove, crushed |
2 (14 ounce) cans mixed beans, drained |
3 tablespoons mayonnaise |
6 leaves basil, chopped |
Directions:
1. Heat the olive oil in a non-frying pan and fry the breadcrumbs until golden and beginning to crisp. Remove and set aside. 2. Fry the scallions in oil until soft and golden. Add the chopped pepper, chili, ground turmeric and garlic. Cook, stirring, for 5min. 3. Add the beans, mayonnaise, two-thirds of the breadcrumbs and the basil. Season, mash roughly with a fork, then press mixture down to flatten. Sprinkle over remaining breadcrumbs. 4. Fry the bean cake over a moderate heat for 4-5min until the base is golden. |
