Great chili recipe that I developed over the years. Not too spicy. Suitable for families with kids. The bacon is a subtle touch that can be omitted, but shouldn't.
Ingredients:
2 lbs kidney beans
1 tablespoon olive oil
2 cups onions, chopped
4 garlic cloves, minced
4 slices bacon
1 lb ground beef
3 tablespoons chili powder
1 1/2 teaspoons oregano
1/2 teaspoon hot pepper, crushed
1 1/2 teaspoons black pepper
1 1/2 teaspoons cumin
1 1/2 teaspoons celery seeds
6 tomatoes, chopped
2 teaspoons sugar
1 tablespoon red wine vinegar
2 bay leaves
Directions:
1. Fry bacon, remove and chop. Saute onion and garlic in olive oil. Stir in ground beef and cook until brown. Drain fat. Add remaining ingredients and bring to a boil. Reduce heat, cover and simmer until thick (about 1 hour). Thicken with some corn meal mixed with water if neccessary. Remove the bay leaves before serving.
2. Serve with bowls of raw chopped Vidalia onions, shredded cheese, and plain boiled macaroni.
