This is from TOH. I am posting this for safe keeping. 55 per serving. Tasty & inexpensive my kind of meal. Ingredients:
7 (4 ounce) cans whole green chilies, drained |
3/4 lb monterey jack cheese, cut into strips |
1 cup cheddar cheese, shredded |
5 eggs |
1 1/4 cups milk |
1/4 cup flour |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon hot pepper sauce |
Directions:
1. Split chiles lengthwise; rinse and remove seeds. 2. Drain on paper towels; pat dry. 3. Stuff chilies with cheese strips. 4. Place half of chilies in a greased 11x7 inch baking dish;. 5. sprinkle with 1/2 cup cheddar cheese. 6. Repeat layers. 7. In a small bowl, beat the eggs, milk, flour, salt, pepper and 8. pepper sauce until smooth; pour over chilies. 9. Bake, uncovered, at 350 degrees for 40-45 minutes or until. 10. a knife inserted near the center comes out clean. 11. Let stand for 10 minutes before serving. |
