This spicy stew goes great with rice and hot tortillas. This is a big hit with my family- I always make an extra big batch and freeze a little for later. Ingredients:
3-4 pounds of cubed pork |
1 large onion diced |
4 cloves chopped garlic |
1/4 cup vegetable oil |
1 tbsp salt |
2 tbsp ground cumin |
5 poblano or pasillo peppers |
1 yellow bell pepper |
2.5 pounds of tomatillos |
1/2 bunch of cilantro |
40 oz low sodium chicken broth |
2 jalapenos |
Directions:
1. Heat oil in pan and cook onions and garlic until soft. Season with Cumin and salt. 2. Remove onions and garlic from pan and add pork to sear. 3. Add onions and garlic back to pan 4. Add enough chicken broth to totally cover the meat and onions 5. In a food processor finely chop the peppers and add to the pot 6. Puree tomatillos and cilantro and add to the pot 7. Simmer for 3 hours- the longer it cooks the better it gets! |
