Excellent for brunch or for dinner. This most tasty casserole is courtesy of my friend, Miss Jan. No one doesn't like this! Ingredients:
1/2 lb ground turkey |
1 cup chopped onion |
1 3/4 teaspoons ground cumin |
1/2 teaspoon oregano |
1/2 teaspoon garlic powder |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
1 (16 ounce) can refried beans |
2 (4 ounce) cans green chilies, drained |
1 cup shredded monterey jack cheese |
1 cup corn |
1/3 cup flour |
1/4 teaspoon salt |
1 1/3 cups skim milk |
hot sauce |
2 large eggs, litely beaten |
2 large egg whites, litely beaten |
red onion, slices |
chopped cilantro |
Directions:
1. Preheat oven to 350°. 2. Brown turkey with onion until crumbly and brown. 3. Remove from heat and add next 5 ingredients. 4. Arrange half the chilies in 11x17 baking dish& top with half the cheese. 5. Spoon turkey mix on top, spread evenly, leaving 1/4 inch border. 6. Top with corn and arrange remaining chilies over all. 7. Top with 1/2 cup cheese. 8. Combine flour, salt and milk in bowl; add hot sauce, eggs, and whites, stirring with whisk until blended. 9. Pour over casserole. 10. Bake at 350° for 1 hour or until set; let stand five minutes. 11. Garnish with onion slices and cilantro. 12. Ole! |
