Chile Rellenos

Serve this dish with a fresh fruit salad and warm bread
Ingredients:
1 cup chopped onion
1 1/2 tablespoons butter
2 (5 ounce) cans chopped green chilies, drained
2 cups shredded cheddar cheese
1 cup shredded monterey jack pepper cheese
3 eggs
1 cup sour cream
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 cup chopped seeded fresh tomato
Directions:
1. Preheat oven to 350 degrees.
2. In a saucepan, stir and cook onions in butter until tender.
3. Stir in green chilies; spoon evenly into a 8x8 inch square baking dish.
4. Sprinkle with cheeses.
5. In a bowl, beat eggs lightly.
6. Add sour cream, salt and pepper flakes; beat until blended.
7. Spoon mixture over cheese.
8. Sprinkle with chopped tomatoes.
9. Bake about 40 minutes or until knife inserted in center comes out clean.
