Serve this dish with a fresh fruit salad and warm bread Ingredients:
1 cup chopped onion |
1 1/2 tablespoons butter |
2 (5 ounce) cans chopped green chilies, drained |
2 cups shredded cheddar cheese |
1 cup shredded monterey jack pepper cheese |
3 eggs |
1 cup sour cream |
1/4 teaspoon salt |
1/4 teaspoon crushed red pepper flakes |
1 cup chopped seeded fresh tomato |
Directions:
1. Preheat oven to 350 degrees. 2. In a saucepan, stir and cook onions in butter until tender. 3. Stir in green chilies; spoon evenly into a 8x8 inch square baking dish. 4. Sprinkle with cheeses. 5. In a bowl, beat eggs lightly. 6. Add sour cream, salt and pepper flakes; beat until blended. 7. Spoon mixture over cheese. 8. Sprinkle with chopped tomatoes. 9. Bake about 40 minutes or until knife inserted in center comes out clean. |
