This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Duncan Estate in Mesquite, Texas in 1997. Ingredients:
1 pound lean ground beef |
1 onion chopped |
2 cans whole green chile peppers drained |
1-1/2 cups shredded cheddar cheese divided |
4 eggs |
1/4 cup all purpose flour |
1-1/2 cups milk |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Preheat oven to 350. 2. In skillet over medium high heat combine ground beef and onions then sauté 5 minutes. 3. Drain well. 4. Arrange 1 can of the chile peppers on bottom of a baking dish. 5. Sprinkle with half the cheese and top with meat mixture. 6. Sprinkle meat mixture with remaining cheese followed by the next can of chile peppers. 7. In medium bowl combine eggs, flour and milk whisking until smooth. 8. Pour this into baking dish over the chile peppers. 9. Season with salt and pepper then bake at 350 for 50 minutes. 10. Let cool for 5 minutes before cutting. |
