Red and green make this a festive dish. It can be a hot as you wish. . just add more chilli. The chicken stock can be replaced with a vegetable sauce for a vegetarian dish. Ingredients:
2 tablespoons oil |
2 onions, thickly sliced |
1 teaspoon chili powder |
1 tablespoon flour |
1 cup chicken stock or 1 cup water |
1 lb green beans, trimmed and cut |
1 red pepper, seeded and sliced |
1 teaspoon tomato paste |
salt and pepper |
4 small tomatoes, peeled and quartered |
Directions:
1. Heat oil in saucepan or wok. 2. Add onions and fry until softened, about 8 minutes. 3. Add chilli powder and flour. 4. Cook stirring for 2 minutes. 5. Gradually add stock stirring until smooth. 6. Add beans, pepper and tomato paste. 7. Lower heat and simmer 15 minutes. 8. Season to taste. 9. Add tomatoes and cook another 3 minutes. |
