Chile and Cheese Casserole |

This is in answer to a request. It has fresh roasted chiles instead of canned. I have not made this recipe, but it sounds good. Ingredients:
12 large green chili peppers |
2 cups whole milk |
1 teaspoon salt |
4 eggs |
1 lb processed cheese, grated |
1 cup cracker crumb |
4 tablespoons butter, melted |
Directions:
1. Roast and peel chile, remove stems and seeds, (or use canned or frozen). 2. Place alternate layers of chile and cheese in a greased baking dish. 3. Leave enough cheese to sprinkle on top. 4. Beat the eggs slightly, add milk and salt. 5. Pour over the chile and cheese. 6. Mix melted butter and crackers together. 7. Sprinkle remaining cheese and the buttered cracker crumbs on top. 8. Bake at 325ºF for 15-20 minutes. |
