My dad makes the best potato salad, and I used to eat it on freshly toasted baguette all the time. This is a quicker version of it so I can relish a taste of this comfort food easily. It's an unusual (and starch rich!) combination, but potatoes with bread together is unexpectedly satisfying - try it!
Ingredients:
3 ounces potatoes, cooked and chunked
1 1/2 tablespoons miracle whip light
2 celery ribs, diced
1 hardboiled egg, chopped
1/4 loaf baguette (about 4 thin slices)
mustard (optional)
ketchup (optional)
salt and pepper (optional)
Directions:
1. Mix potatoes, miracle whip, celery and egg to combine.
2. Toast baguette slices until golden brown.
3. Divide and spoon mixture on top of each slice.
4. Serve immediately and enjoy!
5. Note: Optional condiments are suggestions, feel free to use other condiments to your own personal liking. My dad always adds freshly ground black pepper on his salad at the end, after he mixes it.
