A friend gave me this recipe. Ingredients:
1 medium onion |
1 garlic clove, minced |
2 tablespoons olive oil |
1 (14 1/2 ounce) can diced tomatoes |
salt |
pepper |
1 (8 ounce) can green chilies, whole |
corn tortilla |
oil |
2 cups cheddar cheese, grated |
1 pint sour cream |
Directions:
1. Saute onion and garlic in oil until onion is clear. 2. Add tomatoes and salt and pepper to taste. Simmer 10 minutes. 3. Remove seeds from chiles and slice into 4 inch strips. 4. Cut tortillas into triangles and fry in hot oil until crisp. Drain. Place half of the tortilla chips in a 9 x 13 inch baking dish. 5. Layer tomato mixture, chiles and cheese. Make a second layer of each, ending with the cheese. 6. Heat in oven at 350 degrees for 30 minutes or until bubbling and the cheese is melted. Remove from oven and top with sour cream. 7. Place under broiler for a few minutes until lightly browned. Serve hot. |
