Something new to try for breakfast or brunch! Ingredients:
1 tablespoon butter |
2 tablespoons finely chopped green peppers |
2 tablespoons finely chopped onions |
1/2 cup finely chopped tomato, without skin or seeds |
1/4 teaspoon salt |
1/8 teaspoon cayenne pepper |
1 1/2 cups grated monterey jack cheese or 1 1/2 cups cheddar cheese |
2 tablespoons milk |
1 egg, slightly beaten |
4 pieces toast |
Directions:
1. Melt butter in a skillet. 2. Add the green pepper and onion and cook, stirring, until soft. 3. Add the tomatoes and stir over low heat for 5 minutes. 4. Add the salt, cayenne pepper, and cheese. 5. Cook, stirring constantly, until the cheese melts. 6. Combine milk and egg. 7. Add to cheese mixture and stir briskly. 8. Cook 1 minute more, and spoon over pieces of toast. |
