I'm not sure this is a kosher potato pancake, but when I woke up this morning an angel told me to mix this up and it would work. It sure did. Ingredients:
1 medium potato, raw |
1/2 cup onion |
1/2 cup eggbeaters (equals 2 eggs) |
3 tbsp chickpea flour |
1 tsp salt |
1/2 tsp pepper |
Directions:
1. Grate the potato and onion. I used a food processor to get it over with. Noisy but fast. 2. Mix the the potato, egg, floour salt and pepper well. 3. Spray a large griddle liberally with PAM cooking spray and heat to medium high. I use an electric griddle for this and put the setting at about 350. 4. 3 table spoons of mixture makes 1 pancake. 5. Cook each side about 3 - 4 minutes until browned. 6. Servings 6 7. 1 pancake Per Serving 8. Calories 71 9. Fat 0.33 10. Carbs 11.03 11. Protein 5.83 12. Fiber 1.47 |
